Stuffed Pepper Soup
2 pounds organic, lean ground beef
6 organic bell peppers, chopped
2 large onions
1 1/2 cups brown rice
1 14.5 oz can organic, diced tomatoes
1 can organic tomato sauce 14.5 oz
1 Tablespoon oregeno
1 teaspoon salt
1/2 teaspoon pepper
8 cups organic beef broth
1 tablespoon olive oil
1. Brown ground beef, peppers, and rice in oil.
2. Add seasoning, salt, pepper, diced tomatoes, tomato sauce and stir well.
3. Add beef broth and bring to a low boil, simmer 25-30 minutes until rice is tender.
