Baked Apples

Ingredients

3 apples

1 tsp cinnamon

1-2 tsp coconut sugar (optional)

1 Tbsp crushed nuts or seeds

 

Directions:

  • Preheat oven to 350°
  • Slice apple in half and remove core and seeds
  • Place apples flesh side up in baking dish
  • Sprinkle with cinnamon, coconut sugar and nuts/seeds
  • Bake for approximately 35 minutes until apples are soft

Chicken-Berry Salad

Ingredients:
3 cups salad greens
½ cup grape tomatoes
½ cup chopped salad veggies, your choice: peppers, carrots, onions, etc.
1.5 tbsp olive oil
1.5 tbsp apple cider vinegar
Salt and pepper to taste
3 oz grilled or roasted chicken, chopped
¼ to ½ avocado, sliced
1 cup berries: sliced strawberries, raspberries, blueberries, blackberries, pomegranate seeds, whatever you like
2 tbsp pumpkin or sunflower seeds
(optional: 2 tbsp crumbled goat cheese)

Directions:

Wash salad greens and place in big salad bowl. Add in the grape tomatoes, salad veggies and chicken.

In a small bowl, whisk together the oil and vinegar and add in the salt and pepper to taste. Whisk again as you pour over the salad greens. Toss together to mix.

Add the chicken, avocado, berries, pumpkin/sunflower seeds and optional goat cheese and toss again. Serve and enjoy!

Wild Blueberry Banana Bread*

Ingredients:
3 ripe bananas
1/4 cup maple syrup
1/4 cup coconut sugar
1 tsp alcohol-free vanilla extract
1/2 cup unsweetened almond milk
2 cups gluten-free oat flour
1/2 tsp sea salt
1 tsp baking powder
1/2 tsp baking soda
1/2 cup frozen wild blueberries
Chopped walnuts, for topping (optional)

Directions:
Preheat oven to 350F. Line a 9×5 loaf pan with parchment paper.

Place the bananas in a bowl and mash with a fork. Add the maple syrup, coconut sugar, vanilla extract and almond milk. Mix well.

In another bowl, combine the oat flour, sea salt, baking powder and baking soda. Whisk until lump free. Add the wet ingredients and fold gently until you get a uniform batter. Add the blueberries and stir very gently, just enough to incorporate them.

Pour the batter into the loaf pan and bake in the oven for 40 minutes. After this, turn the oven off but leave the banana bread in the oven for 10 more minutes. Remove from the oven and cool completely before slicing.

Overnight Cherry Coconut Chia Pudding

Ingredients:

3 tablespoons of chia seeds
1 cup coconut milk (you also can use almond or other nut milk if you’d like)
1 cup chopped cherries (frozen or fresh, your choice!)
1 tablespoon (to taste) of honey (optional)
Dash of vanilla
½ teaspoon cinnamon

Place all ingredients in a glass container and stir well. Cover the container and place it in the refrigerator overnight.

When it’s time to eat, place serving in a bowl and garnish with an optional teaspoon of almond slivers.

1 sliced banana

1/4 C blueberries

1/4 C cashews or walnuts

1 Tbsp almond butter

spinkle of cinnamon

coconut flakes

 

Directions:
slice banana into bowl and add blueberries & nuts.  Top with almond butter, cinnamon and coconut flakes.  Mix and enjoy!
