Greek-Inspired Meatballs with Avocado Tzatziki Sauce

For the Meatballs:

1 lb ground grass-fed beef

3/4 cup onion, finely diced (set aside a little for the sauce)

2 cloves minced garlic

1 tsp dried oregano

½ tsp cumin

1 tsp coriander

½ tbsp lemon zest

1 tsp sea salt

Ground pepper, to taste

For the Tzatziki:

1 ripe avocado

1 medium minced cucumber, seeds removed.

2 garlic cloves

1-2 tbsp diced onion

2 tbsp lemon juice

1 tbsp fresh dill (if using dried, use ½ tbsp)

Sea salt and pepper

Preheat the oven to 350 degrees.

Mix together the meatball ingredients. Form into 2-inch balls, and place them on a baking pan. Bake for 25 minutes.

When it’s time to serve, put all the tzatziki sauce ingredients in a high-speed blender and blend until creamy.

Serve and enjoy!

Beef and Butternut Squash Stew

Ingredients:
2 lb Butternut Squash, peeled and cubed
3 – 4 tbsp Olive Oil
1 large onion, chopped
2lb organic beef chuck
32oz Beef Stock (organic, gluten free)
2 garlic cloves, crushed
sprig fresh thyme, or dried
sprig of rosemary, or dried
1 tsp salt
1 tsp pepper

Directions:
1. Prepare the squash by peeling it, removing the seeds and cutting it into cubes.
2. If your beef is not already cut into pieces then cut it up into cubes, and the same for the onion.
3. Heat the oil on a medium heat in a large pot with a solid bottom, then add the onion and sauté for a couple minutes, now add the beef and brown it for a couple of minutes.
4. Add the beef stock, herbs, salt and pepper.
5. Cook it on the stove top on a low simmer for about an hour with a lid on the pot, do not boil.
6. Finally add the butternut squash and cook for a further 30 minutes or until beef is tender.

Ingredients:

• 1 ½ Lb. boneless pork loin, cut into 1-to 2 -inch cubes;
• 1 green apple cut into 1-inch cubes, (skin on);
• 1 large red onion, cut into 1-inch cubes;
• The juice from 1 medium sized orange;
• 2 tbsp. extra-virgin olive oil;
• 1/3 cup balsamic vinegar;
• 4 garlic cloves, smashed;
• ¼ cup raw honey; (optional)
• Sea salt and freshly ground black pepper to taste;
• 6-7 Bamboo skewers;

Directions:
In a non-metallic container, combine the balsamic vinegar, olive oil, orange juice, garlic, and honey (if using any).

Season to taste with sea salt and ground pepper. Add the pork cubes to the marinade, and refrigerate for at least an hour.

Once the meat has finished marinating, heat up the BBQ to medium-high.

Skewer the meat with the green apples and the onions. Try to place the meat between the onion and the apple to give it extra flavor.

Season the skewers to taste with sea salt and black pepper, and place on the grill.

Cook each side for about 3 to 4 minutes (a total of 12-16 minutes). Serve with a light summer salad.

INGREDIENTS:

– 1 lbs pork loin, sliced

– one large sprig of fresh rosemary

– 1/2 cup unsweetened applesauce

– salt, pepper, and garlic powder to taste

– olive oil and grass-fed butter for frying

 

INSTRUCTIONS:
– Heat a large pan with olive oil and butter.

– Season one side of the pork cutlets with salt, pepper, and garlic powder.

– Place the pork into the pan with the seasoned side down.

– Season the other side, flip them when the meat starts cooking around the edges and the underside is browned (about 3-5 minutes depending on the thickness of the cutlets).

– Pour applesauce over the pork. Add rosemary. Let other side cook through (another 3-5 minutes).

1 medium yellow onion cut in half & sliced

1 Tbsp. olive oil

(1) 32oz container Organic Chicken Brothturkey-meatball-soup

(1) 28oz can organic, diced tomatoes

(1) 5 oz tub organic baby spinach

1 lb Organic, ground turkey

1 egg

1/4 C grated parmesean cheese

1/2 C Gluten Free bread crumbs

2 tsp. minced garlic

 

Combine turkey, egg, cheese, bread crumbs & garlic.  Roll into 1 inch meatballs and set aside.

Add oil to sauce pan and add onions.  Saute for 5 minutes.  Add chicken broth and diced tomatoes and bring to a slow boil.  Add meatballs and let cook for 5 minutes.  Turn heat down and add spinach.  Simmer for 5-10 minutes and serve!
