Fat Burning Chocolate Chip Cookies
- 1 ½ C. almond butter, unsalted and raw
(best to use almond butter, not peanut butter) - ½ C. honey or 100% maple syrup
- 2 eggs or 4 TBSP. chia seeds for 1 egg
- 1 TBSP. vanilla extract
- ½ TSP. salt (only add the salt if you’re
using unsalted almond butter) - ½ TSP. baking soda
- ½ TSP. baking powder
- 2/3 C. shredded, unsweetened coconut
- ½ C. dark chocolate chips (70% or higher cocoa)
Preheat oven to 350°F.
Oil baking sheets (coconut oil is preferred) or line with parchment paper.
Stir together first 7 ingredients. Mix well. Make sure honey is fully incorporated.
Added coconut and chocolate chips. Mix well.
Scoop with a cookie scoop onto cookie sheets.
Bake 9 – 12 minutes or until lightly browned
